Half shell scallops can be prepared in various ways, such as baking, broiling, grilling or sautéing. They are often seasoned with herbs, garlic, parsley or lemon to enhance their natural flavors.

Cooking Guide: (Steamed Garlic Scallop with Vermicelli)

Ingredients:

  • 10-12 scallops, cleaned and patted dry
  • 100g vermicelli noodles (rice noodles)
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice wine or dry sherry
  • 1 tablespoon sesame oil
  • 1/2 teaspoon sugar
  • Salt and white pepper, to taste
  • Green onions, thinly sliced (for garnish)
  • Fresh cilantro leaves (for garnish)
  • Red chili flakes (optional, for spice)

Instructions:

  1. Preparation: Cook the vermicelli noodles according to package instructions until just tender. Drain and set aside. Rinse the scallops under cold water and pat them dry with paper towels. Set up a steamer. If using a bamboo steamer, line it with parchment paper or cabbage leaves to prevent sticking.

  2. Season for the Scallops: In a bowl, combine the minced garlic, soy sauce, oyster sauce, rice wine or sherry, sesame oil, sugar, salt, and white pepper. Mix well.

  3. Steam the Scallops: Arrange the scallops (separated from shell) on the parchment paper or cabbage leaves in the steamer basket, making sure they are not overcrowded. Spoon the garlic and sauce mixture evenly over each scallop.

  4. Steam the Scallops: Steam the scallops over high heat for about 6-8 minutes, or until they are just cooked through and tender. Be careful not to overcook, as scallops can become tough.

  5. Serve: Place the cooked vermicelli noodles on the scallop shells. Carefully arrange the steamed scallops on top of the vermicelli. Garnish with thinly sliced green onions, fresh cilantro leaves, and red chili flakes (if using). Enjoy!
