    Cooking Guide: (Simple Recipe!)

    Ingredients:

    • 500g Asari clams, cleaned
    • 4 cups water
    • 2 tablespoons miso paste (white or red, according to your preference)
    • 1 block (about 100g) of silken tofu, diced into small cubes
    • 2 green onions (scallions), thinly sliced
    • (Optional) 1 tablespoon soy sauce
    • (Optional) 1 tablespoon mirin
    • (Optional) A few sprigs of fresh cilantro or parsley, finely chopped

    Instructions:

    1. Cooking the clams: In a large pot, bring the water to a boil over medium-high heat. Add the clams to the pot and cover with a lid. Steam the clams for about 3-5 minutes or until they open. Discard any clams that do not open.

    2. Add tofu and seasonings: Lower the heat to medium-low. Add the diced tofu to the pot with the clams. If using soy sauce and mirin, add them now for extra flavor.

    3. Dissolve miso paste: In a small bowl, dissolve the miso paste in a small amount of hot broth from the pot to make it easier to incorporate into the soup without clumping. Once dissolved, add the miso mixture back into the pot. Be careful not to boil the miso paste as it can destroy its delicate flavor.

    4. Simmer and finish: Gently simmer the soup for another 1-2 minutes, stirring gently to combine the flavors. Taste and adjust seasoning if necessary. Add more miso paste for a stronger miso flavor, if desired.

    5. Serve: Ladle the miso soup into bowls. Garnish with thinly sliced green onions and chopped cilantro or parsley, if using. Enjoy!
